Place on greased baking sheets; bake at 375°F for 8-10 minutes or until edges are lightly browned. Cool on wire racks.

Reduce speed to low; add flour mixture and mix just until combined. Divide dough in half; shape each half into a disk. Wrap each disk in plastic wrap; refrigerate for at least 2 hours (or overnight). Preheat oven to 350 degrees F with oven rack in middle position . Roll out dough on a lightly floured surface to about 1/8 inch thickness Using templates as guides(see note), cut out pieces from dough With remaining dough scraps roll out again and continue cutting out pieces Replace templates over rolled dough so you can see where to cut; do not stack scraps on top of each other - keep them covered so they don't dry out Work quickly as dough will start to warm up and become harder to work with Assemble House: Arrange 5 roof slats trimmed evenly along edge of longest side of House Front panel using icing as "glue" Gently press edges of roof slats against icing Hold in place until set - about 5 minutes Pipe icing along front panel top edge then attach side walls using same method Stabilize walls by inserting four toothpicks vertically into bottom edge of each wall - two at front and two at back Place front panel on work surface Pipe icing onto back side edge of roof Slap piece of acetate sheet on top then quickly flip over so gingerbread is now right side up acetate sheet will protect the house while it dries Pipe icing along top edge of front panel Reinforce door opening by piping additional lines across short end - this will help prevent door from breaking off when removing acetate after drying Assembled House should now look like this Let dry completely - overnight is best Make Royal Icing: In bowl of electric mixer fitted with clean whisk attachment , whip egg whites on high speed until stiff peaks form Gradually add confectioners' sugar , whipping continuously on high speeduntil mixture forms stiff glossy peaks Add a few drops of desired food
